Inscriptions Typed in black ink on applied label on verso, BC: 4/62 24) ALL THAT MEAT and no potatoes. Buying meet [sic] in France \ requires intimate knowledge of the animal, in this case \ the steer. There are 17 different cuts on display here \ including heart and liver of heifer (Genisse), silver- \ side of beef (gite-gite), a cut around the haunch (bavette) \ and shoulder-blade (paleron).
